Most people associate this name with fermented cabbage... Kimchi can consist of fermented radish or cucumber, for example. However, it is most commonly made from Napa cabbage - this is called Baechu kimchi. Kimchi is one of the healthiest foods in the world. It is a type of seaweed that grows around the Japanese island of Hokkaido, but its huge stands can also be found off the coast of California and New Zealand. Wakame has one very good quality - where the sea is polluted, it stops growing. As a result, it never absorbs any potential harmful substances, only health-beneficial minerals. Among the most important things that the wakame seaweed contains, it is necessary to mention: calcium, iodine, iron, potassium, phosphorus vitamins A, C, vitamin (B1) and niacin (B3), protein, fiber, omega 3 fatty acids. This extremely rich composition leads to the fact that wakame seaweed has excellent effects on our health. It is an essential seasoning and marinade with a beautiful intense flavor that pairs well with vegetables and seafood. Ponzu is a citrus sauce used in Japanese cuisine as a marinade or addition to soy sauce. It is made from rice wine, rice vinegar, bonito flakes, and seaweed flakes. After cooling and straining the liquid, it is infused with a Japanese citrus fruit called yuzu. Other Japanese citrus fruits are also used, e.g. Sudachi, daidai, and kabosu. It has a very strong taste that covers the spectrum of taste; it can be salty, spicy, sweet, and sour at the same time.
